These past couple of weeks have been a nice change of pace. Our summer days seem so much more relaxed without having to worry about the kids sports schedules. Being able to actually have time to prepare a meal, rather than trying to rush it before we head out or have it ready so that the kids have time to digest before crawling into bed, has been so nice. In fact, it had me so inspired this week, that we are trying out three new recipes, that I found on Pinterest. I really love Pinterest. There is something about visual bookmarking that works well for me. I occasionally will do an actual search for something on Pinterest, but most of the time, I rely on the Pins that the people that I follow share. The new recipes this week are Chicken Enchilada Pasta (it was yummy by the way), Sesame Beef Stir Fry and Tomato Basil Pasta. If I find them to be keepers, I will share the recipes on A Busy Mom of Two In the Kitchen. I have already shared the Chicken Enchilada Pasta, which we enjoyed on Monday night and as leftovers on Tuesday.
