Menu Plan Monday

It was a too short, yet much accomplished sort of weekend. There were a few things that I had intended to do that just never got done, but I suppose that you will always have that. Thankfully, none of them were time sensitive to the point that doing them later this week will be a problem.

I started the weekend right by finalizing the remainder of my income tax filing - federal, state and local. The net result is favorable to us, although some might see that as unfavorable because I could have had that money as spending power spread across the year in each pay check. I probably should look at where I am in withholding and tweak it. The challenge is that my husband is a contract employee and is paid on a 1099, so no taxes are withheld. I find it easier to withhold for this from my pay, rather than deal with estimates each quarter. I just remember the shock one year of not properly planning and don't want to repeat that one.

Saturday was filled with Zumba and Zumba Toning, soccer, grocery shopping, and dinner and visiting with friends. Sunday I got a lot done around the house, played games with the kids, went for a walk with my daughter and went out for dinner with friends.

Homemade Pizza (although, I might do French Bread Pizza to use up a loaf I bought to take to dinner with friends, but he made homemade bread)

Sonora Chicken Pasta

Friday
Tilapia Vera Cruz

Breakfast is cereal or oatmeal each morning. Lunch for the kids is either the school lunch or usually a couple of times a week they pack. Lunch for my husband and me is typically sandwiches, frozen meals or leftovers.
