It was a great weekend. It was a busy weekend. I didn't do half of what I wanted to do this weekend.
Saturday was populated with sports. We had friends over on Saturday night (I found out about an hour before they arrived!) and hung out and shared a bottle of wine while the kids played, first outside and then downstairs after dark.
Sunday was a more quiet day - we only had one game.
I had designs on cleaning and doing laundry - a little was accomplished, but not what I had hoped. I had plans to finally put in the garden, but the time just didn't create itself.
As a result, there are a few things already on my to do list for this week.
Sunday
cereal
Macaroni and Cheese
Creamy Chicken Florentine
Monday
Chicken Enchiladas
Tuesday
Pasta
Wednesday
dinner at our favorite Mexican restaurant
Thursday
Crab Cakes
Friday
Pork Chops
Saturday
Cookout
Breakfast is cereal or oatmeal each morning, although sometimes at school my daughter will have pancakes or french toast. For my son, lunch is either the menu item at school or a packed lunch with some type of sandwich. Lunch for my husband and me is typically sandwiches, frozen meals or leftovers.

Your menu looks good- the kinds of things we enjoy. I've only ever made cheese & onion enchiladas, but your chicken enchilada recipe looks much better (to me) than the one going around with the cream of soup, I think I will be giving it a try soon.
I had a weekend of not getting everything I wanted done, but that'll happen- and I got different things done that in the long run make me happier- and hey- the work is still waiting when I am ready to tackle it. :)
