Menu Plan Monday

What a crazy week it was last week. I can't really pinpoint one thing, but it seemed to be a busy week. Maybe it was just relative to the leisurely sort of weeks we had the two weeks prior. Any way, by Saturday morning, we were out of milk and bread and only had one egg. As my husband said, we needed the big 3. So, after my son's basketball game, we all headed to the grocery store. Needless to say, I wasn't well prepared and we just sort of shopped. As we did, I noticed sales that I should come back for (and did on Sunday - see here about my cereal and cheese deals). Never shop hungry. We not only seemed to eat our way through the store, but we seemed to buy a few extras we might have otherwise skipped.

The family shopping trip inspired a new dish for dinner on Sunday. My husband was looking for a spicy pasta sauce and the only ones that we found were rather expensive. So, I set out to find a recipe to make it at home. Personally, I prefer homemade sauce to store bought most days. There is something so much more bright about the flavor when you make it at home with crushed tomatoes as a base.

Sunday
Penne Arrabiata

Monday
Pizza

Tuesday
Tacos

Wednesday
Pigs in a Blanket - with breakfast sausage

Thursday
Fish Fillets

Friday
Roasted Shrimp with Tomatoes

Saturday
TBD

Breakfast is cereal or oatmeal each morning, although sometimes at school my daughter will have pancakes or french toast. For my son, lunch is either the menu item at school or a packed lunch with some type of sandwich. Lunch for my husband and me is typically sandwiches, frozen meals or leftovers.
