A few weeks ago, when the grocery was having a seafood sale, we picked up some Tilapia fillets that were on deal. We enjoy many fish dishes, but I always feel like I need the right recipe for the fish. Once we find that go to recipe, it is how we prepare that type of fish most of the time. I do have a couple of recipes for some fish, but not many.
So, now that I had bought the Tilapia, I needed to find the right recipe to make (yes, I'm pretty sure that I have made it before, just couldn't find a recipe for it). I have a tendency to cut out and print out recipes and set them aside to try someday. I started sifting through my file of recipes to try someday and found one for Tilapia Vera Cruz. It sounded really good and fresh with tomatoes, lime and cheese.
After putting it on the menu and planning to make it a few times only to have our plans change, I finally was able to make it last week.
It was a hit. My husband even told me that I could "make it for people". I asked about this, turns out things like tacos he doesn't think I could make if we had people over...funny thing is, that was what I was planning for the meal after my son's First Communion. I guess we'll have to discuss that menu plan!
Tilapia Vera Cruz
1/2 c Sun Dried Tomato Salad Dressing
1/4 c Lime Juice
1 can diced tomatoes, drained
3 oz cheddar or colby jack, shredded
1 # Tilapia
Combine the salad dressing and lime juice. Pour 1/2 of the marinade over the fish in a baking dish. Let sit for 15 minutes in the refrigerator Bake at 400 for 20 minutes. Then, combine the other 1/2 of the marinade with the tomatoes. Pour over fish. Top with shredded cheese. Continue to bake for another 5 minutes, until the cheese is melted.
Serve with rice pilaf.
