Last week, I mentioned that I was looking forward to a quiet Labor Day weekend. As last week ended, we slowly added things to our plans. Saturday, we joined some friends for dinner out at our favorite local Mexican restaurant and a few hours of bowling. Sunday, on really short notice, we headed to our friends house for dinner, bringing along the Skyline Chili I had been cooking all day (it felt like the perfect day for fall food). Monday, we ventured out to bd's Mongolian Grill for a mid-afternoon meal with some friends. We had planned to do some shopping, but the kitschy stores near by all seemed to be closed when we called ahead.
This week is busy again with soccer and football. So, meals that are quick to put on the table are key to our ability to eat a family meal. Some meals, I prep the night before so that I just have to finish the meal the night we eat it.
Our menu includes turkey on a few days. I used it to make the Skyline Chili on Sunday and the Turkey Salisbury.
