What a crazy week I have in store. My son is playing flag football this fall and this week is the skills camp. The camp takes place in the evenings, from 5:30 - 8! I don't know about you, but to me those times are very difficult. Since I work full-time, getting dinner on the table for the family in time for my son to eat and properly digest just isn't feasible. Dinner's this week will be a bit of grab and go. My husband has agreed to pick my son up from latch key early enough to feed him by 5, so that he has time to start to digest before practice begins. We are keeping meals simple for the days of camp.
We wound up with leftovers last week and bumped Rattlesnake Pasta to this week. Works out well, because that helps to cover Monday's meal. Turkey is only on our menu once this week (seems harder to use when we are busy?) with the hamburgers on the grill. Normally, if I had gotten to Kmart, I could have used Turkey for the luncheon meat sandwiches, but since I only go up there about once a month it didn't work out.

Weekdays breakfast is at daycare for my daughter, the rest of us eat cold cereal, frozen waffles, oatmeal, toast or whatever strikes our fancy. Lunch we pack, usually leftovers for me.
