Jessica, aka FishMama, over at Life As Mom is hosting a Fall Festival of Fun, Foods and Friends. Today's topic (it is Ultimate Recipe Swap day) is Favorite Fall Foods. I will say, I have a lot of favorite fall foods. Some are main courses, but I'm noticing a lot of desserts come to mind - ones made with apples and pumpkins. The fall is a time when I welcome back roasts, my crock pot, chili and comfort foods. I love Thanksgiving and make a Thanksgiving feast for my daughter's birthday and for Thanksgiving.

Taco Soup
Here is my recipe for chicken chili. It has been too long since I have made it. It's not a traditional white chili that you normally find chicken in, which is part of what I like.
Chicken Chili
1/2# skinless, boneless chicken breast, cut into 1" pieces
3/4 c chopped onion
1/2 c chopped green pepper
2 cloves garlic, minced
1 can kidney beans
1 can diced tomatoes
1 c chicken broth
1/2 c ketchup
1 tbsp chili powder (or more, to your taste)
1/8 tsp crushed red pepper (or more, to your taste)
toppings:
sour cream
sliced green onions
shredded cheese
tortilla chips
Tabasco Sauce
Cook chicken with onion, green pepper and garlic over medium heat, until chicken is no longer pink, stirring constantly. Add remaining ingredients. Cover, simmer 10 minutes. Top with toppings of your choice.
Sometimes, as a variation, I will add 1/4 c additional broth and will add 1/2 c uncooked instant rice when I add everything else. Of course, if you are feeding a larger crowd, you can double and triple the recipe.

oooh! On first glance, this looks like a cross between chili and tortilla soup. Yum!
