Lemon Cookies

There is just something about lemon that is so refreshing. When I was a kid, my best friend's mom used to make these lemon cookies that were simply amazing to me. They were soft and almost melted in your mouth. The lemon flavor was good with the right amount of sweetness.

Once I got the recipe, I was amazed at how simple they were. I make them for myself now. I learned, by packing them in my lunch, that they are really good right from the refrigerator - the coldness seems to enhance the lemon.

Lemon Cookies

1 box Lemon Cake Mix
1 8 oz container Cool Whip
1 egg

Mix together the three ingredients. Place cookie dough in freezer for about 15 minutes. Roll cookies into balls and then, roll in powdered sugar. Place on a greased cookie sheet and bake for 10 minutes at 350F.

really?! Just a cake mix and whipping cream!? that seems to easy and so delicious... I will have to give these a try!

do you think these would ship well if packaged correctly? I bake every month for a deployed soldier and these sound easy and delicious... I am thinking of other flavor possibilities too, like the pineapple flavored mix... with my soft cookie I normally pack them in disposable gladware containers to avoid them being smashed. Let me know what you think! Thanks, can't wait to try these!
