This is a really simple recipe that is a great way to munch on fresh veggies. I don't know about you, but sometimes it can be difficult to fit five to nine servings of fruits and vegetables into my diet everyday, let alone getting the kids to eat that many. At my house, the kids like to munch on vegetables. They are more likely to eat them as a finger food than any other way(even peas are a finger food) and if they want to snack while I make dinner - vegetables are my choice. So, when I can find fresh green beans at a good price, this is a great way to snack on green beans.
1# Fresh Green Beans, tipped
Put into boiling water for 4 minutes, then immediately put into icy water.
Since, every munchy vegetable needs a dip. We make this horseradish dip, with light mayonnaise to eat with them:
1/4 c Light Mayonnaise
1 tbsp Horseradish (if your kids aren't adverse you can kick it up by doubling this)
1/2 tbsp Dijon mustard
1/2 tbsp honey
1/2 tbsp vinegar
Mix together. Serve with fresh veggies, not just green beans.

Great idea for veggies and dip. Kids love that stuff. Not sure about the horseradish though :) Thanks for sharing. Jennifer @ cooking like a frugalite
my dad would enjoy that dip for sure ... he loves horseradish.
