Corn Souffle

Jessica over at Life As Mom has been hosting some Thanksgiving recipe swaps. This one might have qualified last week for the vegetable dish swap, but I didn't find the chance to post.

A few years back (okay, it's been more like 10 or 12 years ago), we started occasionally hosting Thanksgiving at our house, for those that weren't headed home. Along the way, I have picked up some recipes from dishes my guests made. This is one that I really enjoy. The recipe is easy, yet somehow, I only think to make it on occasion.

Corn Souffle

1 8 oz can Cream Corn
1 8 oz can Corn
1 8 oz container Sour Cream
1 stick margarine/butter
2 eggs
1 box Corn Muffin Mix

Mix all ingredients and bake at 325 for 1 1/4 hours or 350 for 45 minutes.

I usually use a casserole dish and spray it with cooking spray before pouring in the mixture. I haven't tried it, but have thought about getting a can of the corn with the diced peppers in it to give it a little extra flare.

  1. I make the SAME recipe! I love it!!! I am bringing in the ingredients to my son and daughter's kindergarten classes this week for "cooking class". It is easy to make for them and yummy too!

    We call it "corn pudding cake" for the kids and they eat it up.
