Today was a cool, blustery rainy day. Aside from being great sleeping weather, it makes me ready for the fall and for all those wonderful soups and stews and warm dishes that you seem to skip over the summer. One favorite of mine is Taco Soup. I got the recipe from a co-worker. She packed it in her lunch regularly and it just smelled so good, I had to ask for the recipe. It is super easy to make and yummy to eat.
Taco Soup
3# ground meat
2 c water
Small onion, diced
Brown the above, don't drain.
Add
1 packet taco seasoning
1 packet Hidden Valley Ranch original dressing mix
1 c picante sauce
2 cans pinto beans
2 cans corn
2 cans diced tomatoes
Let simmer.
I serve mine with a small dollop of sour cream and some shredded cheddar cheese.
You can stretch your dollar on this soup by doubling all the ingredients under "Add".
When I make it, we typically eat it for dinner and I freeze the rest in lunch servings for packing in my lunch.
I have a couple of other soup recipes that I will have to share over the next couple of weeks. I love soup for dinner.
